Ingredients
- 4 Ripe Spanish persimons
- 4 Cloves
- 4 Cardamom pods, crushed
- Pinch of golden caster sugar
- Pinch of ground cinnamon
- 60g/4 tbsp Clear honey
- 290ml/10fl oz boiling water
Whipped cream or vanilla ice cream to serve
Method
- Preheat the oven to 200°C/400F/Gas 6
- Slice the top off the persimons and add a clove to each fruit and place them into an ovenproof dish
- Scatter the broken cardamom pods over the persimons and sprinkle with the cinnamon
- Dissolve the sugar in a small pan with the honey and water and bring to the boil, then boil for 2 minutes
- Pour the syrup over the persimons and bake in the oven for 1 hour or until the fruit is tender. Baste the persimons every 15 minutes with the syrup
- Serve warm with cream or vanilla ice cream and pour a little more syrup over the top to finish
