Persimon, blueberry and pomegranate salad

 

Serves 2

Ingredients

  • 2 Spanish Persimon, thinly sliced
  • 100g Blueberries
  • 100g pomegranate seeds
  • Small bunch of fresh mint, roughly chopped
  • Yoghurt and honey to serve (optional)

 

Method

  1. Mix all the ingredients together to a large bowl
  2. Drizzle with honey and serve with yoghurt (optional)
